Hawaiian Ham Quesadillas

I’ve discovered yet another easy lunchbox dish that would carry well, easy to make & super delicious. It is also VERY addictive.

This is another modified recipe from the amazing BudgetBytes which I simply love and would use over and over again. It’s inspired by Hawaiian pizzas, and the fillings are more or less the same.

1 pack (8 pieces) of tortilla wrap. I used Mission Wrap’s onion & chives tortillas
2 yellow onions, chopped
1 can pineapple cubes
6-8 slices of chicken ham (may be substituted with pork, beef or turkey ham)
2 cups mozzarella cheese
1 cup cream cheese
2 tablespoons chilli flakes (you may reduce or omit if you’re not into spicy stuff)

First, prepare the ingredients. Chop the onions and the chicken ham into small squares. Remove the pineapple cubes from the can, drain the juices and slice them into smaller pieces.

Combine the cream cheese, onions, mozzarella cheese and chill flakes. Mix them well, ensure both cheeses are well combined. The cream cheese needs to be at room temperature in order for it to combine better.

Then throw in the pineapples and ham into the mix and combine until all ingredients are distributed evenly. Use two mixing spoons to make the job easier.

Once the mixing is done, grab the tortilla wraps and a skillet. No oil is required at all! So please use a dry skillet. Scoop out the mix and place it on one half of your tortilla wrap. You’ll need to be able to fold it over nicely without spilling the contents, or having it be too empty.

The green spots on my tortilla wrap are not mold, they’re because this is an onion & chives flavored tortilla. You may use plain ones or any other type.

Then fold it over into half and place it on the skillet. Set the heat to medium and flip the quesadilla over from time to time until the outsides are browned. Them remove and start cooking the next one until all the mixed ingredients are used up.

Slice each into halves or threes and you are all set. Serve while it’s hot. They also keep well for 2 days in the refrigerator. Reheating required.

These are very cheesy so be sure to eat it with something that contains more fiber. I had mine with some yummy salad greens for lunch. 🙂
